- Yellow onion (½, finely sliced)
- Green onions
- 15 mL of sesame oil

- Water (7 cups)
- Chicken meat (8 slices)
- Dried shiitake mushrooms (1 ounce)
- Soy sauce (1 tbsp)
- Eggs (4 pcs)
- Small bok choy (two, vertically sliced)
- Chinese egg noodles (8 ounces)
- Enoki mushrooms (cleaned and cut, 100 gram)
- Sliced green onions (¼ cup)

Step 1: Place your 5 cups of water, alongside chicken, and shiitake mushrooms inside a saucepan. Boil it while also closing the saucepan with a lid.
Step 2: Remove the saucepan from heat and leave it with a lid for 15 minutes.
Step 3: After 15 minutes has passed, strain the broth into a bowl, pour it inside the saucepan and set aside chicken and shiitake mushrooms. set aside the saucepan with a lid and pour the other 2 cups of water inside a dutch oven and let it simmer.
Step 4: At the same time, place your eggs in a vegetable steamer and steam them for 6 minutes inside the dutch oven filled with water. Close the lid.
Step 5: Add your bok choy into the steamer and leave it for 2 minutes.
Step 6: Remove the steamer from the pan alongside the bok choy and the eggs. Set the bok choy aside and place the eggs in ice water for one minute. peel and cut the eggs in half.
Step 7: You are ready to serve your ramen! Make sure to divide the noodles evenly between servings. Top the ramen bowl with bok choy, enoki mushrooms, bamboo shoots and green onions. Also serve two egg halves for each bowl.
12. Udon with Enoki
Here is another enoki mushroom recipe for you that will satisfy your appetite! Udon with enoki mushrooms! Here are the ingredients:
- 400 grams of Udon noodles
- 4 ounces of enoki mushrooms (cut and cleaned)
- 170 grams of Trimmed green beans
- 170 grams of Carrots (washed, finely sliced)
- 10 grams of garlic (washed, minced)
- 30 grams of ginger (washed, peeled and minced)
- 2 green onions
- 15 mL of sesame oil
- 22 mL of soy sauce
- 45 mL of Hoisin Sauce
- Concentrated vegetable broth
The tools that you will need are one non-stick pan, one pot or cooker, a bowl, and something to stir with.
How to make it:
Step 1: boil salted water and mix it with soy sauce, hoisin sauce, vegetable broth and ⅓ cup of water to make your sauce
Step 2: heat up a non-stick pan with medium-high heat then add sesame oil, green beans, and carrots. Stir and cook for 6-7 minutes
Step 3: after 6-7 minutes has passed, add garlic, ginger, and green onion. While doing this, start boiling the noodles using a pot under medium heat. Do this for 1-2 minutes
Step 4: Drain the noodles and add them to the non-stick pan alongside the sauce and enoki mushrooms
Step 5: stir the pan until the mushroom wilts. Place it unto a plate and it is ready to be served!
For this recipe, you can also add chicken meat to improve the taste. I would recommend cooking the chicken meat separately by stir frying it and adding the sauces for 10-15 minutes!
